Curried Roasted Califlower

As Thanksgiving and the holidays fast approach, most of us are looking for something just a little different to make as a side dish.  This month’s recipe comes from our good friend Katharine. 

Curried Roasted Cauliflower

Serves 4-6

1 head cauliflower cut into large pieces
1/2 cup flour – add salt and pepper to taste
2 whole eggs – whisked
1 Tablespoon Curry Powder ( I like to use Maliga Masala from our local producer)
1/2 cup finely grated Parmesan cheese
1/4 cup Panko bread crumbs

Mix the eggs with the curry powder. 

Mix the parmesan cheese with the panko crumbs, add some additional curry to this if desired.

Dip the cauliflower into the flour, then the egg mix, then the cheese mixture.  Place all the coated pieces on a non-stick mat or parchment paper lined cookie sheet.  Bake at 375 for approximately 25-30 minutes.  The cheese becomes a nice crust over the soft cauliflower.    Easy huh?
